For a while, and I don't recommend eating this all the time, but I've been cooking miso soup occasionally. Boil some water in a pot. While it's boiling... Heat up, stove top, low heat, some vegetable broth--it really varies based on how much you want. Thinly slice two mushrooms and one carrot. Slice up some tofu. Put the slices of mushrooms, carrots, and tofu in a bowl. Add chives (if desired) Use your best judgment but a clear sign is when the vegetable broth is bubbling on the sides, add a tablespoon of red miso. Stir the red miso and vegetable broth together, keep heat on. Then, Add udon noodles to the boiling water pot for two minutes. Drain the udon noodles. Add udon noodles to the bowl of vegetables and tofu. Pour in the vegetable broth mixed with red miso. Voila!

That sounds good. My curiosity is, what is miso? A spoon of red miso, what is the miso stuff?
