We had this for Breakfast on Saturday.
I know that exact measurements are posted for the orange zest and orange juice, but I just usually use the zest and juice from one or two oranges. Either works well. It depends on how orangey you want it. Just remember to reserve half the zest for the topping.
For the Cake:
2C Flour 1/2 teaspoon salt 1 Tablespoon baking powder 1/3 C sugar 2 teaspoons grated orange zest 1/4 C butter 1/4 C Milk 1/2 C OJ 1 beaten egg
Mix together all dry ingredients and orange zest. Mix in butter, mix in the rest and put in greased pan. Prepare topping, and top cake with it.
For the topping: 1/2 C sugar 2 Tablespoons orange zest 1 teaspoon cinnamon 1 Tablespoon butter
Mix everything together and top cake with it.
Bake cake at 400 F for 30 minutes.
