Apple and Walnut cake
Apple cake:
1 3/4 cups of plain flour, sifted
2 teaspoons of baking powder
OR
1 3/4 cups 2 tsps SR flour, sifted
1/4 tsp salt
1/2 cup milk
1/2 cup butter, softened to room temp
1 cup sugar
2 eggs
2 large granny smith apples
1 tsp vanilla essence (Optional - makes for a sweeter cake)
Topping:
4 handfuls of walnuts
Sticky Icing:
3 tsps butter
3/4 cup icing sugar
Milk - enough to combine the rest of the icing and make it sticky
Preheat oven to 170C or 360F
Sift flour, salt and baking powder - set aside.
Cream butter, add the sugar, continue creaming till very fluffy
Add eggs, and cream some more.
Mix in milk
Add the dry ingredients, mix well. This should resemble something that looks almost like cookie dough - very thick.
Cut apples into quarters, decore them, (do not peel) then slice each quarter into 4 slices, then 4 segments per slice. (about 16 pieces per quarter) basically, you want chunky apple squares. Mix into the basic cake batter.
Grease and flour an 8"/20cm round pan, spoon mixture in, and bang on counter to flatten it.
Bake until a skewer/knife/fork comes out clean and the cake is spring-y (about 40 minutes) set to cool.
When the cake is cool, roughly chop the walnuts, set aside.
In a bowl mix the butter and the icing sugar till the icing has gone the slightly yellow - when pressed together, will stick, then crumble.
Add a small amount of milk at a time to the icing mix, till it looks like icing and is shiny and well combined.
Ice cake, and sprinkle generous handfuls of walnuts. The idea is to hide the icing - jam as many walnuts as possible into all the gaps and firmly press the walnuts in the icing.
Serves 6-12
Best kept: in a cake container at room temp.
Other options: Grate two large carrots to replace the apples.
