This is a breakfast food I made up, and liked a lot, and have been making pretty regularly since last week. Ingredients: Butter 2 - 4 eggs 4 - 6 slices of deli cut roast beef (optional) cheese Required Tools: Stove Pan Lid that fits over the pan Big spatula Plate Fork Serrated knife 1. Prime a pan (we use a big old cast iron one) over medium heat with a hefty slice of butter. Let the butter melt and start to sizzle and cook and get all tasty. 2. Lay out the slices of roast beef in the pan so that they interlock creating a bed of meat with no gaps. Let those cook for a few minutes. 3. Crack the eggs on top of the layer of roast beef. Cover (or it will never cook through) and check on it occasionally until the yolks and whites are cooked to the consistency you like. I take my yolks runny and my whites solid. 4. Season as you prefer. I usually season my eggs with a combination of pepper or lemon pepper, garlic powder, salt and chili powder as I feel that day. 5. Optional, lay some grated or sliced cheese over the top just before the eggs set to your preferred done-ness and let it melt. 6. Serve!
