Not a very inventive name, I know, but I don't know what else to call it! After seeing Tomorrow, When The War Began 10 times since christmas, I've been dying for two minute noodles. So here's what we came up with:
600g chopped Atlantic Salmon (or a tin of the same, or tuna, or really, any fish) 3 packets of 2 minute noodles (or you could use stir fry noodles) 1 400g can of organic corn (or normal corn) 1 & 1/2 cups of swiss brown mushrooms, halved and sliced. 10 leaves of fresh basil, thinly chopped. Coconut oil Lime juice
1. Unwrap noodles, place in a saucepan. 2. Fry on low medium, in coconut oil, the halved and sliced mushrooms for about 3 minutes 3. Drain the corn, rinse it, and add it to the mushrooms. add more oil, if it's needed. 4. Add the thinly sliced basil. 5. Cook the contents of the pan until they look ready (about 7 minutes) 6. Pour boiling water over the noodles, leave to sit for 2 minutes (or what ever the cooking instructions dictate - aim to have the noodles ready just before the veg and fish.) 7. Add the salmon to the pan, and keep stirring it all around - untill the salmon is just cooked: 3-4 minutes. 8. Drain the noodles, rinse them, pour two dessert spoons of lime juice evenly over then, and serve onto plates. 9. When the salmon is cooked, add a few splashes of lime juice, then serve over the noodles.
Serves three.

Would barley work instead of corn?

I have absolutely no idea, I've never cooked with barley, but give it a go if you think it would work, and post your results. I'm interested in other takes on this recipe.

Maybe, we don't cook fish very often. Her Majesty is not a big fan. I might try it thought.
In recent years I have really fallen out of favor with corn. It has such a unique consistancy though, it's difficult replacing in some things and instead I do without. If have to make the dish twice, once with corn and once with barley, to truly compare.

I usually hate fish, but I have a real thing for Salmon. Tempt her with the Omega 3s I think I may have opened, cooked and eaten about 4 or 5 425G cans of corn in the last two years... So I can understand where you're coming from there. The other thing you could do is make the recipe halved between two pans - one for the barley, one for the corn.

Good point. I'm sure we have two pans that can accommodate half sized meals.
